Duck tartar with dried pistachios and cranberries

Ingredients :
1 duck breast ¼ cup of scaled roasted pistachios
¼ cup of dried cranberries 1 bunch of chives

Preparation :
Remove the skin from the duck meat and chop the meat. Coarsely chop the dried pistachios and cranberries Finely chop the chives and the shallots. Season with salt and pepper.

Orange mayonaise
1 orange
2 tablespoon of orange juice
1 tablespoon of Dijon mustard
1 egg yolk
1 teaspoon of rice vinegar
¼ cup of canola oil
Spicy sauce to liking

Preparation :
Whip the mustard, the egg adn the vinegar, stirring the oil slowly. Add the orange zest, and 2 tablespoons of orange juice. Season with salt and pepper.

Assembly :
Mix the meat, the chives and the shallots, then add the mayonaise to liking in the mix. Add some olive oil, then the spicy sauce to liking.
